Recipe: Chicken and Cheese Mexi-Ranch Sliders

The hot summer heat has arrived and we’ve been spending a lot of time with family and friends just kicking back by the pool. Now that the days are getting longer it’s so nice to spend time in good company enjoying a cool beverages, appetizers and tasty eats and kick back and relax. We love watching the kids play in the pool as we chat about our busy weeks and look forward to holiday approaching and other fun summer parties.

Looking for a Sweet and spicy kick to your slider? Here’s my favorite tasty recipe I love serving friends and family. They fast and easy and take approximately 10 – 15 minutes to make from start to finish.

Chicken and cheese Mexi-Ranch Sliders.

Ingredients:

12 Kings Hawaiian Sweet Rolls

Diced Pre-cooked Chicken

Freshly diced Medium tomato

Sour Cream

Ranch Dressing

Taco Seasoning

Shredded Mexican cheese

Prepare Mexi-ranch spread Mix:

In medium mixing bowl add ranch dressing, sour cream, taco seasoning. When adding ranch to bowl I add about a 1/4 cup to start with. Then I add 3 tablespoons of sour cream and about a 1-2 tsp of taco seasoning and mix. Depending on how much flavor and kick you’d like you may want to adjust the amounts and start off slowly as you add. Season to taste with the taco seasoning. Add diced tomatoes and stir. Refrigerate Mix.

Directions:

1. Heat pre-diced cooked chicken on stove or microwave which ever you prefer. While your heating this you can slice the Hawaiian sweet rolls in half so you can make a sandwich.

2. Now take your mix out of the fridge. You can add a spoon full to the bread like a spread or you may add the cooked chicken fix. Know that if you add the spread first the chicken does tend to slide but I prefer it this way because the sweet and spicy mix together is really tasty.

3. Add shredded Mexican cheese to the top and put in a toaster oven on 325 for approximately 5 minutes or until cheese is melted.

4. Serve hot or cold.

Tip: Can also be served as an appetizer dip. Combine all ingredients in large mixing bowl and stir. Serve up in a medium bowl with Hawaiian Sweet rolls around the side or serve in the middle of Hawaiian round bread using the bread to dip and scoop out to enjoy.

I found that some prefer these sandwiches open face and others prefer them as a Chicken and Cheese Mexi-Ranch Sliders. Either way it’s sweet and spicy goodness that will sure to be the hit of the party.
