Can’t contain the excitement for the Big Game. The big day is coming fast. Preparing for the Big Game party means putting together a party menu to include tasty appetizers, snack, and drinks for all your guests. You’ll want to make sure you include everything from sweet to salty and of course you’ll want to shop early. I found everything I needed at Walmart and the great prices makes it easy to save money while I shop.  Today is a great day to put that shopping list together and don’t forget your favorites from SNICKERS®, Skittles®, Pepsi™, TOSTITOS®.


While thinking about what I want to prepare I remembered this delicious recipe I had in mind for my last party CHICKEN ENCHILADA Nacho Bowls to eat with our favorite Snack chips TOSTITOS® Scoops. Be sure to book mark this recipe for easy access.


1 cup of Shredded Chicken
1 can of enchilada red sauce
2 tsp Taco Seasoning
Bag of Frozen Corn
diced Avocado -if desired
Cilantro for garnish – if desired
Sour Cream
Shredded Mexican cheese
TOSTITOS® Medium Chunky Salsa


1. Cook chicken and shredded. I like to use a fork to pull apart and shredded the meat. Pour into a pan with enchilada red sauce, 2 tsp of Taco Seasoning and heat.

Now add the shredded Mexican cheese and stir to melt. I found it easier to add now then adding to a bowl and microwaving.  Also an option.

 In a separate bowl add the frozen corn, Black Beans,  TOSTITOS® Medium Chunky Salsa and stir. Then add a few squeezes of juice from the lime over the top and mix.  You may also chop and add Avocado. Because my husband is picky I diced mine and added to the top so he can take them off if he wishes.


 Add chicken enchilada, cheese mix to the bottom of the cup. Then top with the corn, black bean and salsa mix.


Top off with Sour Cream, and garnish with cilantro and diced avocado. Feel free to sprinkle shredded Mexican cheese over the top.


These Chicken Enchilada Nacho Bowls are great for grab and go sitting in front of the big game. They have a little bit of everything including TOSTITOS® Medium Chunky Salsa and TOSTITOS Scoops® for quick bites in between plays and of course Chicken.  I put the rest of the mix out in this serving dish surrounded by TOSTITOS Scoops® for game day grazing while passing the snack table. You’ll guest will Thank you for the great meal ideas and will enjoy having  these game day treats for the quick grab and go so they don’t miss the touchdown.
